OSX - Open With
- A file without an assigned running application will not have an file extension (.doc, .jpeg etc) and will appear on the desktop as a blank page icon (with the corner turned down).
- By CTRL clicking the blank icon, you can choose an application from the application menu on the right-hand side.
- More efficiently, you can do an Open With... by dragging the blank icon over the desired application icon on the dock, or the Applications folder.

Here we have a PDF file, whose default application is set to Preview, but we can force it to open in Acrobat Reader by dragging the file icon directly on top of the application icon.
