Old Hawaiian Menus Tell Story Of Local Fish And Their Demise

Once gracing the menus of upscale restaurants on the shores of Waikiki, local fish have all but disappeared from today’s resorts and eateries. Assisting ecologist Kyle Van Houtan in a quest to explain the shift to deep sea and imported fish, McClenachan gathered fishery data from old diaries and restaurant menus from throughout the 20th century.
